This one comes from the Cartavio distillery in the Chicama Valley on the north coast of Peru, a sugar region where the cane grows year-round and the rums tend toward richness rather than funk. Cartavio distills molasses on both a John Dore pot still and a column still, and this 2006 vintage was aged around eleven years in ex-bourbon casks in Peru, then about three more in Ferrand's casks at Javrezac in the Cognac region, for fourteen years in all, before bottling at 47.9% ABV. The published notes read like a Christmas cake: dried fruit, mixed peel, baking spice and toasted nuts, with citrus and passionfruit behind them and dark chocolate, vanilla, oak and walnut oil holding the structure together.
