For years the brewers had wanted to put figs in it, but the fruit's flavor is subtle and kept getting lost. The 2022 answer came from outside the brewhouse: Melissa Alleguez and Ryan Hubona of Goose Island's e-commerce team built a recipe from Melissa's childhood memory of stealing fig cookies from her grandmother's cookie jar during summers on Lake Michigan. The result is Sir Isaac's, a fig cookie and graham cracker-inspired variant made with 10,000 pounds of Black Mission figs, designed to amplify the dried-fruit character the stout already pulls out of the bourbon barrels. The base is the Bourbon County imperial stout, brewed with Millennium hops and aged in bourbon barrels, and the finished beer is 13.9% ABV, released nationwide in select markets. Goose Island's notes are dried fruit, honey, molasses and citrus, all pointing back to the classic fig cookie on grocery shelves. Serve it in a snifter, let it warm a few degrees from the fridge, and the fig and honey come forward as it opens.
