Don Cayo Extra Añejo Tequila
Don Cayo Extra Añejo is a five-year-old lowland tequila from El Arenal, Jalisco, made at Tequilera Puerta de Hierro, NOM 1477, with Leticia Hermosillo Ravelero as master distiller. Extra añejo only requires three years in wood; Don Cayo goes to five in French oak barrels, which is a long time for a valley tequila and the reason this is the top of the standard range. The production is the same as the rest of the line: blue Weber agave harvested from the Tequila Valley around El Arenal, slow-cooked in stone and clay ovens, crushed on a roller mill, fermented in stainless steel and double distilled in copper pot stills, then bottled at 40% ABV. The brand's own tasting notes open with warm caramel and vanilla, then cooked agave and a hint of honey butter on the nose; the palate carries caramelized agave and vanilla into oak and maple with a whisper of smoke, and the finish is long with rounded sweetness and a gentle touch of oak. Sweetness is the house style, and five years of French oak rounds it rather than drying it out. Serve it neat or over one large cube.
