Don Cayo Blanco is the unaged base of a lowland Jalisco line made at Tequilera Puerta de Hierro, NOM 1477, in El Arenal, with Leticia Hermosillo Ravelero as master distiller. The agave is blue Weber grown in the Tequila Valley around El Arenal rather than the highlands, which is the first thing that shapes the style: valley agave tends toward earthier, more herbal, peppery tequila than the fruit-forward highland profile. At the distillery the piñas are slow-cooked in stone and clay ovens, crushed on a roller mill, fermented in stainless steel tanks and double distilled in copper pot stills, then bottled at 40% ABV without any time in wood. The brand describes the blanco as bright and crystalline with citrus on the nose, and across the lineup it leans into cooked agave sweetness with vanilla and caramel showing up once the barrel gets involved.
